Torrija de plátano
Plantain custard French toast with honey rum
Brioche soaked overnight in a custard made from island plantain, fried in butter, then brûléed so the top cracks under the spoon. The dessert that closes the Huerta menu.
Papas arrugadas
Salt-wrinkled Canarian potatoes
Small potatoes boiled in heavily salted water until the water goes and the skins wrinkle and dust over with salt. Three ingredients, one pan, and the most Canarian thing on any table.
Mojo verde
Green mojo with coriander and green chilli
The green sauce that goes on almost everything in the Canaries. Coriander, green chilli, garlic and cumin, loosened with local olive oil and sharpened with vinegar. It takes four minutes and it keeps a week.
